1 well mashed ripe banana
1tsp cocoa powder
1 tin of chickpea water otherwise known as aquafaba
1/2tsp vanilla essence
Get ready to whisk! Using an electric beater, whisk the aquafaba until fluffy peaks form. This part takes the most amount of time and I really wouldn't try this by hand.
In a separate bowl, mash the banana and mix in the cocoa powder and sweet vanilla essence.
Fold the banana into the aquafaba with a spoon or spatula. Do not be tempted to continue to use the whisk as you'll lose the air in the aquafaba and end up with a watery mousse.
Refrigerate until set and enjoy!!
